I finally found the extra time to do some experimental cooking.

Sriracha Chicken Fingers starts with a boneless skinless breast sliced into strips.

Next they are given a predust.  This just so happens to be some extra lemon flavored fish breading.

Onto the batter.  Some of the breading/predust mixed with water and lots of Huy Fong Sriracha.

Final breading.  Panko bread crumbs mixed with sesame seeds and sugar.

Onto the grill to be cooked KFC (Kettle Fried Chicken).  Platted with veggies, crash hots and ABTS.

Next time I want to try marinating the chicken in sriracha for a couple of hours first.

That looks really good......I'd maybe go less spicy for us here, but the breading process looks terrific !!!

I've done something similar with hot wing sauce before. It is amazing how the heat does not come through as much as you think it would. Not that Sriracha is all that hot to begin with.

that does look really good.
I only use kettles with lid bales.
