Good Article, I love the resting period as I usually cook them, have them finish up around 9 or so in the morning and toss them in a cooler with towels and they always come out perfect when I pull them either for lunch or an early dinner.

A really good " poor mans " Cambro are those Thermo Electric Coolers , I cut the cord off and the lid locks really securely and is air tight , much better hold times then a ice chest and towels . I got 3 of them off CL and didn't pay more then & 10.00 a piece for them
