Olive Chicken

I love cooking on my Disc as much as grilling on the kettle :)
Here is a dish I cooked a while back “Olive Chicken”

I started with boneless skinless chicken breasts that I pounded to 1/4 inch thick and dredged in seasoned flour

The remaining ingredients
Mushrooms, asparagus, garlic, lemon wedges and juice, Italian parsley, olives with pimentos, chicken stock, butter, EVOO and spices.

Browned the chicken breasts in a mixture of butter and olive oil

Took them off and seasoned them after browning

added the mushrooms next

then the asparagus

Added the olives, and garlic

Added the chicken back and the stock and some lemon juice and let them simmer in it

Added some parsley at the end

Dinner is served :)

I served it with bowtie pasta tossed in butter, Parmesan cheese and fresh Italian parsley
 
It was a delicious meal :D
