Buttermilk Brined Wings

Took some wings and brined them in a buttermilk/Bad Byrons Butt Rub mixture for 6 hours then dusted them with some 604 rub then onto the front porch. We had a mix of rain and snow today:



I used Kingsford BB with a mix of oak and pecan chunks. Temps at the lid were in the 450f range with the Vartex half full. I added some live coals partway through to bring it up to almost 3/4's full and the temp shot up to 600f. Next time I am gonna go with 600f the whole time.

Looks great....I have been seeing the Vortex and done a bit of research. Looks like an interesting little tool.

Hoss - you have that Vortex method down - looks like they were cooked to perfection.  I bet that buttermilk gave just the right acidity to the meat.  Going to try this one for sure.

I love it on wings 6. Think I have used it 7 or 8 times so far.

I agree with the above post. It's a handy tool for us kettle folk and I've been producing better food since getting mine earlier in the month.

Is that caramel color from molasses Hoss? those look unreal!! You know where to find me if you need a tester to make sure they're safe to eat :)

It was about 45 minutes. I did not achieve crispy skin though...just bite through. I suspect the heat was not high enough. I normally pile coals behind firebricks and get crispy skin no problem in about the same time. I am thinking the vertex sends the heat up high not allowing it to come out as low as with my normal method.  I will try my next wing cook with more coals in the vertex so there is even more heat coming down around the edges of the Kettle.
