@SixZeroFour  the white ring on the pizza is actually the mozzarella melting through. The original fatty had goat cheese in that space, much of which melted out. There are pictures that either @Troy or @argentflame have of the fatty cut fresh. I'm tweaking the recipe and will be incorporating a thicker cheese along with the goat to try and replicate that effect.

Hands down this is the best fattie I have ever tasted. My 6+ hour drive to Socal was well worth it. It was with great pleasure to have finally met @Troy @jamesnomore  and @Jason Beach

We also had tritip. I got a tutorial from Troy on how to slice it properly. The last one I sliced some of the cuts are stringy.

Thanks @Troy for holding this sweet red MT for the last 8 months. I get to cook the tritip on this kettle.

I showed up kinda late, but got there with plenty of time to have a slice of the fatty...very tasty! It was great to meet the guys that were there and look forward to the next one!
