............to have a 26'er around ............ 8)

Had some weird InterToob problems that prevented access to WKC for a time around T-Day, so here's the sftershow........

Brined for about 36 hours with some bottled mix the wife wanted to use....






Plus about a half pint of honey............celery, onions & oranges in the cavity, butter under the skin & shot all thru w/ Cajun Injector creole butter.....the pan has one big can of chicken broth bubbling away.....

Started out down in, but didn't like how fast the skin on the legs was beginning to brown.....so moved up top.....







also had some sweet tater chunks to smoke up.....
Bacon drippings, maple syrup & McCormick's Applewood rub..........



Most of the way done.......



Garlic mashers & gravy (made mostly with the broth from the turkey pan)




Wife did a small (like two bone) rib roast in the oven......shot w/ Bord-O-Lay & Tony's mix....



She had some kind of erector set thing going on here.....



Came out good....



Some of the wife's spiffy cranberry stuffing, green beans & we got good & full.........

Wish I'd taken a plate out in the sunlight for pics......been doing turkeys since the early 90's & this was in the top 10.....



The skin didn't get enough drying time, but the inside was the bomb !!!

Wow. I don't even like beets and those look amazing.

That brine bottle is actually pretty decent. I've used it a few times.

Those beets were done on the Great E-Cook Day.....beets, found a perfectly ripe mango & chunked that up, butter, maple syrup & a little various spices (not too much though)

I don't really like beets, but these were off the hook !!!!
