Cooked some Cornish hens today, had hot smashed potatoes, that I cooked on my pellet grill and strawberry applesauce with hen. cooked at 350-375 for about 1 hr.

Very nice. I did Cornish Hens twice but never thought of doing them spatchcock style. Guess next time I will after seeing how nice yours turned out. Best they where nice and juicy.
