WKC Australian Chapter Meat and Greet (pic heavy)

Firstly, let me say it was an honour and a pleasure to host this Meat and Greet. As well as having the regular crew, I augmented this with some fans and friends that don't have full blown Weberitis. ... but it won't be long. :P

I won't write  too much, but rather just let the pictures tell the story. But I would like to thank Troy for the stickers that I handed around proudly. They were so popular that one particular Grillfella stabbed me with lit charcoal, then stole all of them! :-[

And I'd like to thank Buckie for inspiring me to make some PB&J bacon wrapped turds. 8) When I asked who wanted to try some, I was met with a wall of silence and blank stares. Then when I forced a guy to have one, he couldn't get another one quick enough! :- If anyone ever needed to prove the old adage of pigs flying, then this would be it. They FLEW of the tray and we couldn't get enough of them.

It was a fantastic day, sooo much great food, and great people.

Thanks so much for putting it on Joe, and for putting up with us (especially Dave and his assault on you). Still full today!

Ken, and all the others, I'd love to see some pictures of what was going on. I was getting busy with a lot of the cooking and didn't get a good chance to appreciate everything.  Especially the treasure trove of stuff that you guys brought up with  you.

Just glad they went fast & nothing else happened.....I've almost had fistfights over some versions of 'Turds............ :o

Great show you all put on....mass grillfellas, designated eaters, tons of GREAT looking food, swingin' lookin' display of cookers.....like the photo of the gang around the 18 Lymee, with another 18 Greenie in front !!!

It was more than just the PB&J Buckie. I also took some of your tips re fillings.  Some of them had rib meat instead of a little smokie. And rather than using bacon for all of them, I got some smoked Speck with the right size and had the deli slice it nice and thin and I think that worked so much better than a thick slice of bacon. And just on a whim when I ran out of the bacon, I wrapped the last few in corned beef. I never heard any bad reports, so I'm guessing they were enjoyed as much as the others were.

As I said earlier, I had an absolute blast. And I would do it all again in a heartbeat, irrespective of the nerves and anxiousness before hand.

I'm still working out how I'm going to slide them past the missus

Boy its been some time since I visited you all here...

Joe once again a big thank you for putting on a fantastic spread

Thanks to all you WKC guys it was good to meet some like minded meatheads, over a great feed and a few beers

Thanks Hogsy for the tag. Golly`s chicken and your Pork lion was awesome! I want the recipe for this please!
Even after stuffing my face all day with all the great food, once i arrived home cleaned up, about 8pm I was dreaming of some of Joes pulled pork!

I call them boneless baby back country style ribs (not my name).
I wrapped most in bacon but wanted to try a few wrapped in prosciutto, these where the first off the grill and the ones you guys all tried. I really liked how they turned out with the prosciutto. Next ill try some with spec

Really easy to make, I just got my butcher to cut me 8 long stripes off the back of the top ribs (baby backs) with some loin, this gives you a nice strip with some dark meat, light meat and some fat. The then halved these giving me 16 6inch long... I rubbed these and let them rest for one hour before I wrapped them in bacon/prosciutto the night before. On the day I smoked them with Mulberry wood until they hit 145 internal.

Cant wait for the next one!
