Fish Tacos

My son-in-law to be (aug 30) brought up some fresh Alaska halibut.  Fish taco time!

Mango/Avocado, cilantro salsa and chipotle crema (chipotles, sour creme, mayo,lime juice, salt and pepper):



A few nice fillets lightly seasoned with a nice dry rub



Bisbee gets the call.  I was going to cedar plank them, but was out of cedar.  Instead I cooked on foil and went heavy with cherry wood smoke, using Royal Oak hardwood:

I forgot just how good these are - the firm, smokey fish, the tangy, spicy crema, and the fresh sweet taste of mango.  The payoff:



Fish tacos are pretty straightforward but oh-so-good on the Weber.  Cooking on Bisbee makes them taste even better!

Looks great and fresh fish to boot. Who says eating healthy isn't easy on a Weber.

I find fish tacos are better than regular tacos ... and I go nuts for regular tacos.  :o ;D ;)
