OK, while this is not on a WSM or Kettle, it is on my 30 gallon Weber Redrum, so it has some relevance!
I marinated some wing sections in Aloha Barbecue Sauce and used the Char-Broil Universal Basket on the 18" spit rod and Cajun Bandit ring.
Sprinkled a little Oakridge BBQ Venison & Wild Game rub over the top and fired up a small basket of KBB and a chunk of Guava wood for smoke.
