Surf and Turf plus Spuds
« on: May 03, 2014, 04:15:00 PM »
Last nights dinner consisted of Seared Ahi, Filet and potato, mushroom and onion cheesy bake. If you want it be over quick just go to the last picture, it's money!!!! ;D ;D ;D

Left over fingerling potatoes, Crimini mushrooms and onion all through the slicer on my food processer then tossed with some of what I call Spicy Green Salt (Hatch green chili powder, cumin, garlic granules and kosher salt). Loaded into a cast iron pan with a 1/4 stick of butter sliced and spread across the top then roasted on the kettle for about 1 hour at 350, then topped with Brie and Goat cheeses for an additional 15 minutes to melt the cheese.

Steaks were rubbed with fresh crushed garlic, pepper and olive oil then left on the counter to come to temp.

Ahi was drizzed with teryaki and sesame and set in the Fridge for 30min.

I used my Fire Bricks for this cook, I know I'm getting  350 for 1 hour with a full chimney and about a dozen on the bottom of the pile or yesterdays leftover coals. I used Kingsford Comp and some Pecan wood for the first hours. When it was time for the meat I had a fired up a mini chimney of Royal Oak ready to bump the heat for the steaks and ahi. The Filet went first and while it was resting I piled up all the coals into one concentraded pile and seared the tuna for about 1 minute per side.

Oh the little foils balls each had a head of garlic...mmmmm

Pics here for most of the cook. Everything was fantastic!!!

Thanks! The taters really did steal the show, they were even better the next day with some crumbled bacon  ;D

Very nice!

I like the idea of using fire bricks to separate the oven and grill areas...I'll be using that one!

As good as the fish & beef look, the taters are a truly GRATE recipe !!!!
