3.6 lb chuck roast
Steakhouse seasoning
On the kettle.
Minion it with vents barely open.
Hickory and Orange wood.
Wait.
Wait more.
Foil.
Wait.
Horseradish, onion, lil mayo on a buttered toasted Kaiser roll.
Shut up and eat.

Did this on the 22.5 One Touch Gold Kettle.

How long do we "Wait"?
Total time was about 5 hours...foiled for the last hour, rested for another hour.
