Oyster appetizers and smoked meatloaf with mock mashed potatoes. Nice looking oysters Joe! Nice and uniform in shape and size.

Where were your oysters harvested?
Last two bushels I bought in December and February came from Texas. Apalachicola Florida oyster fishery been shut down by the FWC.

Oyster Rockefeller or similar style is more work than steamed, but well worth the effort.

Tami picked these up from the farmers market shucked and packed, unsure of the origin. She uses those cute little shells for when we do these on the grill. Typically we prefer raw but these are fun to do and eat

I just called Island view seafood in East Point. Which is where we normally buy oysters They have raw oysters from Texas or Louisiana.
Raw oysters are $22 for two dozen.

They no longer sell 1/2 or whole bushels of oysters.

I reached out to Lynn's which is where we usually get them and they said that availability is day to day and wouldn't comment on where they come from if they have them.  So, it's possible, but not from Apalach since harvesting has ceased.  Also put out some FB feelers on the subject.

I’ve eaten farm raised clams and oysters from Cedar Key, Florida. Oysters were good and tasted like a wild CK oyster.

Farm raised or wild Oysters steamed on a Weber kettle with a splash of crystals, horseradish and cold beer, they all taste good!

Looks delicious!  I love meatloaf but have never done one on the kettle or WSM.  Gonna have to do that soon.

Not really, i do indirect on parchment paper to allow all the fat to drain, your choice of smoke wood, this time hickory for me, no sauce this time but I prefer it sauced last 15 20 minutes wide open pretty hot

Not trying to derail your thread.

I cooked a meat loaf on my 26” last night.

When I got home the wife had loaf prepared and ready for the grill. She used 20 ounces each of ground brisket and chuck that I ground a few weeks ago. She used her normal ingredients:  green bell peppers, onions, bread, egg and spices.

RO lump and no wood chunks. She wanted to taste it without wood. Temp at grate level was steady 350, meatloaf cooked for just under 90 minutes.

I saw you used parchment paper. I was going to try it, but my wife already had meatloaf on heavy duty foil. I had to cut slits in foil to drain fat.

Man I just love my new 26er! We were both happy with the results. Moving forward all meatloaf will be cooked on a Weber!

Lunch today: cold meatloaf sandwich

Over the years my wife has refused to eat cold meat loaf sandwiches. She broke down and tried one today and loved it.

Looks good!  I like 'em warm with mustard, ketchup and pickles.  Can't go wrong either way though.

It’s a redneck tradition,kinda like turkey and thanksgiving...ham at Christmas, (my house does standing rib roast) black eyed peas on New Years...cold meatloaf samich is the bomb! Just a little mayo, mustard, and velveta.....and kerpow!
