Depends on how big the bird is and how hot your fire is.
Could be done in 1.5hrs maybe

Hahaha, I was very unclear. It's a boneless pork shoulder.
I recently did a five pound Boston butt, IT of 200-204 and it took 9-1/2 hours.

So can you explain your set up? Are you attempting to catch the drippings in with the vegetables? how did they turn out and did you put any sort of rub on the chicken?
