Title: Got the kettle pizza deluxe for fathers day
Post by: jeremiahmercier on June 16, 2019, 08:45:00 AM
Going to attempt my first ever pizza in the new KP Deluxe, how many chimneys of coals are you guys using, I can only fit 1 whole chimney in the char baskets. Should is push them to the sides and put a second full in between? Any pointers for a first time, especially anything special for a first time using the kit/stone?

I can help... I’ve only used 1- 1/2 at a time but I use 1/2 lump and put hickory wood chunks on it after I pour the ashes over chimney.

Good luck you’ll do fine. Just don’t over think it.

I’d recommend also precooking any meat and veggies in a pan

dont have what you have for the pizza ... I have the weber stone for the 22 ... I usually dump like almost 1 chimney all over the the lower grate  ...and shoot 400 to 450 degrees after the flames burn off the charcoal ... then I look for the golden brown crust turning the pie about every 2 - 3 minutes ... make sure to use alot of cornmeal flour mix under it ... check out baum grillin on u tube ... he also has a nice dough recipe that use almost all the time ... good luck

Gosh Jeremia, Those pizza's are real beauts!  How's about a quick tutor session on how you make such grate pizzas? I'm a novice at this pizza stuff!

Well, I'm new myself, just got it Fathers day. I will say this though, I thought it best for me to get the Pan pizza down first, that way I can play with coal and wood amount, and start to better understand the oven itself and how to regulate temps. So far, it's been very consistantly. I use 1 FULL chimney of coals, arange in a "V" at the back of kettle (I use the char baskets). And what doesnt fit in the baskets, goes in between them (under the pizza). I let the grill sit for maybe 10-15 minutes WITHOUT the kettle pizza, I keep the lid on, and low and slow till I'm ready to ramp it up (only takes a few minutes for the temp to sky rocket). To ramp it up, I just put the kettle pizza on, add 1 small piece of dried apple or peach wood (I have trees) on top of each basket, lid on (TOP VENT CLOSED), and let her rip. Once up to temp, I slide the pizza in, @ 1.5 minutes,  I rotate 180 degrees, go back in for another 1.5 minutes,  and check, pull when crust looks good

I must give credit to my wife for their appearance and pairing of toppings, she puts them together, I just cook them

Those look fantastic!  I have to get a pizza kettle one of these days.  The key though is the dough, you guys make your own?

Actually not yet, but will be on the next one. We've just been using the pillsbury pizza dough. My thoughts were try to perfect the cook process first, then start to get fancy. May even try the pillsbury on the stone first, then try my own dough. But honestly, the pizzas have been the best we've ever had, so no complaints on the pillsbury here

I kind of had the same idea as you in keeping to simple for the first few pizza cooks. I picked up the prograte and tombstone pizza stone from kettle pizza and have been using parchment paper when I form my crusts. Just peel it on the stone for a minute or two and use a metal peel and careful finger wor to slide the paper out.  Have to watch the paper a bit cause it will catch fire.  I am happy to report that there has not been any pizza fatalities (other than eating them) using this method.

That's good...

Unfortunately we all the sudden decided to do the Keto diet the 3rd week of July, so no pizzas since then. It's been just a week over a month now and I've lost 25 lbs and the wife 16 lbs. We have a keto friendly crust-dough that she makes, I'm thinking of trying it on the grille maybe this weekend. Shes successfully done it in oven twice. I'll let yall know how that goes.

I am glad your diet is going so man.  Pizza has always and will always be my weakness.  Hopefully after a little bit more of the diet food you can go back to the real deal lol.
