Title: Wrong rub ribs
Post by: Lightning on January 28, 2018, 04:48:03 PM
I guess the title pretty much indicates how today's gone almost, but not quite, to plan.  It started off sleeping in a lot later than planned and waking up as stiff as a board from football last night. Then, going to a Canadian Tire to pick up a large firewood rack which the website claimed there were three of in stock. The reality in the store was zero.  I went into the thrift store next door to see if there was anything worthwhile given I'd already made the trip and picked up a corningware pot, a bunch of CDs and an unopened record album:

Given how bland and boring and tacky Toronto was around the time this was made, I'm dying to know how bad this record is!

Anyways, I got a late start to preparing the ribs because that trip took longer than I planned.  I'm doing side ribs instead of my usual back ribs. The breast bone attached to this one rack is by far the largest I've ever seen.

It was after putting the rub on the second of the two racks that I'm cooking that I realized I used the wrong rub. I'd gotten a bottle of Cluck & Squeal Rib Formula that I've been wanting to try and I picked up and used the bottle of Bold Browning by mistake. So, it'll be interesting to see what this is like on ribs and what their rib rub is like at a later date.

WSM ready to go with lots of wood.

The smoke's on and the ribs are underway.

The ribs are about half an hour away from getting wrapped up right now.  I'm relaxing with the cat and a cup of tea in the living room giving the CDs from the thrift store a spin. The housework isn't getting done but it's all good, there's always tomorrow and I just want to relax and enjoy the last of the weekend.

Chicago/19's playing right now.  When it finishes, it'll be time to check on the ribs.  I'll post pictures as they come along.

Humming along:

All done:

They passed the taste test despite the wrong rub. I wouldn't hesitate to use the Bold Browning rub again.  Still need to try the rib formula.

Dessert is coming out of the oven:

Those are peanut butter and chocolate chip cookies. I already had one as "quality control". It was good!

The ribs look juicy with a nice smoke ring. What type of smoke wood?  I need to make some ribs soon.

Well done! May I ask what thermometer you are using. I like the digital graph it provides.  Thanks
PS how was the album? ;)

@Lightning The ribs look great, and a nice smoke ring! Good job despite the wrong rub.

The ribs look juicy with a nice smoke ring. What type of smoke wood?  I need to make some ribs soon.

I used a mix of pecan and apple chunks on these ribs.  That with the Maple Leaf briquettes added a nice but not overpowering smoke flavour.  Wrapping them, which I don't usually do, definitely helped keep these ribs moist.  I suspect I'll be doing that more often in the future.

Well done! May I ask what thermometer you are using. I like the digital graph it provides.  Thanks

I've got an iGrill 2 that I've been using with my old original revision iPad Mini.  It was getting long in the tooth and becoming painful to use for most tasks so I replaced it with a new iPad last summer and set it aside for exclusive use with the iGrill 2.  The upshot is I can leave it at home constantly in range of the iGrill and use the new iPad wherever I want which may or may not be within range and it doesn't matter.  I did go to some lengths to game the App Store into downloading the last 3.x version of the iGrill app because I seriously dislike the 4.x version.

I haven't spun the album yet.  I spent the last couple of days listening to the CDs I picked up at the same time.  The record's waiting for this weekend when one of my friends is going to be visiting and we're going to take it out of the wrapper and put it on the turntable for a listen since both of us are curious to hear it.
