The Vortex is a great bit of kit to have. I have a couple of Kettle Kones that are made by a small company here in Australia.

Crispy chicken wings on the Weber, using a Vortex (or similar)


Ingredients:
3kg of chicken wings (drummet’s and or wingette’s)
4 tablespoons of paprika
2 tablespoons of garlic powder
1 tablespoon of onion powder
2 teaspoons of Cajun seasoning
2 tablespoons of Master foods Moroccan Seasoning
1 teaspoon of sea salt crushed
½ a teaspoon of black pepper freshly ground


Directions:
1. Mix all dry ingredients and cover all of the wings. Place them back in the fridge for an hour or so before cooking them.

2. Get a full chimney of hot coals up to temperature and place in the Vortex (or similar) and place some wood for smoke over the coals.

3. Place wings on outer circle of Weber cooking grate, keeping about an inch or two free from the Vortex.

4. Put the lid on and let the wings cook for an hour.






Blue Cheese Dipping Sauce


Ingredients:
75 grams of Costello’s Blue Cheese roughly chopped
¼ of a cup of mayonnaise
¼ of a cup of sour cream
1 clove of crushed garlic
1 tablespoon of lemon juice


Directions:
1. Place in blender and blend until smooth.

2. Chill in fridge before use.




These wings come out super crunchy on the outside and so moist inside. I cannot make enough of these when people come over.

Funnily enough, I've never even thought about trying it on larger pieces. Hmmm, I feel a whole roast chicken is getting cooked this weekend :)

....I tried this over the weekend - ok, the recipe wasn't 100% exactly the same.

 I used some shop bought 'Smokey Texan BBQ Powder' which already had the paprika, onion, garlic and pepper powder all mixed together!

.....but I still wasn't able to get the skins on the chicken pieces to go crispy?! I'm cooking them at a temp of around 250C - do they need to be cooked hotter to get the skins to go crispy?!

I ran out of olive oil one time so I put the chicken pieces on the grill then sprayed them with PAM. It’s now my go to method. Try it some time.

Pam sounds interesting,will have to try it. I usually toss my wings in canola oil in a stainless steel mixing bowl. After they have cooked awhile I brush what ever sauce I’m using on them

I like it. Nice crispy skin, no mess tossing in or brushing on oil. Just spray and close the lid.

I haven't had a problem with getting crunchy skin. I have other recipes where I use olive oil. I know each kettle I own holds temps differently, due to the seal of the lid.

...well - they were a little more crispy than normal but still weren't as crispy as I would have liked (I would like a distinct crunch when biting through the skin!!)!!!

I previously covered them in olive oil and some chicken seasoning, and put them onto my grill, as soon as the charcoal was ready from the chimney (didn't preheat the grill before hand like I normally do), and just let them cook until my thermometer probe gave me a reading of 175F (the chicken temp is pre-set).

Food did taste great though but I think for the next session, I may switch back to how I used to cook before (preheat the grill for 10 minutes, and then sear the chicken for 1 minute each side, above direct heat, with the lid closed. Then switch to indirect heat until I get the required temp from the probe).

White or dark meat?  Don’t be afraid to take dark meat to a higher internal temp. It is very forgiving and won’t dry out. I usually cook it until I’m satisfied with how it looks and feels. Usually that’s higher than 175. Breast meat on the other hand will dry out if taken much above 165 internal.

...it was all white chicken meat - but still cooked it to 175F. It still came out very juicy though (juices were obviously clear!).

Just need to experiment with different methods.

I don’t have the vortex but I do have experience trying to get high heat out of a 26”. If you want temperatures higher than 450 you will most likely need to leave the lid cracked while cooking.  I can get mine in the 650-700 range with lid cracked. Maybe using a vortex will be different and you won’t need to crack the lid?  Keep us posted.

If you want extra crispy whether chicken or pork belly, the trick is to remove the lid  on the  last 5-10 minutes of cooking. Removing the lid during indirect cooking will lower the temperature at a more gradual rate. Moisture coming from inside the meat will steam the skin  because of the sudden temperature drop when you remove the meat from a very high temperature grill. You will sacrifice some moisture inside the meat but you'll end up with a very crunchy skin.  You can also use an oven for the last 5-10 minutes. Just make sure the oven has been preheated to 400F then turn it off and leave the door partially cracked open.   Place the meat on a wire rack. Try it and you'll have a very crispy skin.

I think y'all missed the key part of the original post...In the fridge...

After rubbing or breading poultry parts I always put them uncovered in the fridge for an hour or so...It sets the breading and readies it for crisping on the grill...

Give it a try...Works for me...
