Title: Working the Twins

My two weathered warriors are chugging right along. Provolone, asparagus and sun dried tomato stuffed chicken breasts on one and red potatoes and rainbow carrots on the other.

Thanks, guys. It was mighty tasty. The chicken breasts were a bit dry, but the flavor was great. First time for roasting carrots with charcoal. They were incredible! I have a new go-to side.

Did you parboil the taters? Oil and herbs on the veggies? Great beer choice, you must be upper Midwest.

I'm not sure what parboiling is. I just gave them a light coat of olive oil, salt, pepper and granulated garlic and threw them on a perforated grill pan. Oil and herbs on the carrots.

I'm in Indianapolis, but I work with someone who's folks go to Wisconsin often. My sister used to live there, but moved back to Indiana. She's the one who introduced me to the Spotted Cow.

And, yes, Sean, I highly recommend the carrots. Crazy good stuff.

Thanks! It was my first attempt with the carrots. I trimmed the long thin tips off of most of them. Never again. They caramelized and tasted like smoky candy. The magic of fire! [emoji91]

I remember taters every time & almost always forget to do something, anything w/ carrots !!!!
