Sorry still no pics - picking up new phone/camera on the way home tonight.
Weeknight meal - -Super fast and simple.
Sauce was a can of San Marzano tomatoes pureed with garlic and oil. Topped wiith wet-packed mozza sliced into rounds, torn bazil and diced pancetta.
2/3 of a chimney briquettes dumped on one side, no baffles, baskets or stones. Pizzas assembled on 8" Lebanese flatbreads and placed right on the grate. Baked indirect and covered for 5 minutes, then spun the grate (I LOVE the round grate for this reason!) and grilled them direct to toast the bottom for a minute.
Not exactly authentic, but plenty tasty and good satisfaction for a regular old Wednesday night :)
