Sometimes you've gotta break down the mini and just use the Weber Smokey Joe as a high temp grill (will a full chimney of hot coals).
So here's what was on the menu: Friday's supper for two: shrimp and lemon risotto with roasted zucchini, and a side of 130 degree sous vide USDA Prime NY Strip (medium rare, of course) for good measure...because who can say no to that beautifully marbled steak staring at you in the market?

The sous vide never fails to nail the perfect temps, and the Weber Smokey Joe sears the Prime cut into a heavenly state.

Thanks! The marbling on that particular strip was gorgeous. As I browsed through HEB's meat department, I couldn't pass it up @ $3.97/lb on sale
