I broke in El Pulpo Rojo with some chicken (She~Cone ::)) today.
I used a carne asada rub and mesquite for smoke. The skin was perfect bite through crisp. :)

Nice way to get it all dirty!! Looks very good! How did the paint hold up? And, I forgot to ask, what did you use for a center section when you added it?

The paint held up fine. Center section? You mean the extra bolts I added in the mid section holding the pan?
