I have a problem. I love fried chicken. I really love a good chicken fried steak. And there is something I have found that I like even better than a chicken fried steak - Cracker Barrel's Chicken Fried Chicken. It's just like a chicken fried steak except it uses a chicken breast pounded flat instead of a steak. My problem is that I don't know of a good breading recipe and I don't want to rely on packaged mixes. I don't care for the crushed cracker crumb varieties. They just seem like fried cracker crumbs to me. I am wanting to work at adapting the kettle fried chicken technique to make chicken fried chicken like Cracker Barrel but I need a good breading recipe to launch from.

Would someone be willing to share a good breading recipe that works well for these types of foods?

I would be surprised if they don't sell it in front of the store. If not, try to talk the manager into giving you some. Then reverse engineer it.
