Butts & Sausage on a Red 18

Well, butt chops to be more precise.
They got a sprinkling of Kosher salt and fresh cracked pepper.
Also, some mild Italian sausage. Used a couple small chunks of pear wood for smoke.

I did a reverse sear with the chops. First time cooking this type of chop.
Will do more time indirect next time. The meat around the bone was still a bit chewy.  ???

I fabricated a couple of baskets. One is the diameter of the charcoal grate. The other is a little one that works well with the round one.
It provides a decent area to perform the sear on the meat, while still with enough room for indirect.

Some people call those meat pieces "Pork Steaks".....any way you slice it those look good to me !!!!

You're becoming quite the "Gizmotologist" with the baskets, rings, pizza rig & etc.....Good Job !!!!

And....I think I forgot to say elsewhere.....Nice cleanup / fixup on the Red !!!!

mmm, that looks good.
