pulled chuck

Gday fellow WKCers
after too many pulled porks and the wife not a pork fan
and drinking beers with hogsy he said he was doing pulled beef
so i jumped in and said hell yeh me too
got a 3.1 kg chuck for $15/kg
threw on some oil then tatonka dust and putin the fridge overnight
8am this morning setup the snake on the performer, got 6 briqettes ashy and threw it on when it hit 100F
heres a couple of pics

Looks great so far golly! What does the tatonka dust taste like? It looks interesting and very popular but I can wrap my head around why it turns black. I need to order some one if these days...
