More kettle ribs
« on: July 21, 2013, 03:49:11 PM »
Bought an inexpensive slab of spares and used what friends and I call the "ring of fire" (snake method). Texas Roadhouse rib rub and 3-2-1 process. The 2 hours foiled really tenderizes them nicely. The kettle maintained 240-250 for the entire cook. Nothing left but a pile of clean bones.
