First Pork butt on the performer!

This is the first butt I have done on my new to me performer.... actually come to think of it this is my first one on a 22.5. Decided to do this last minute as it is a nice cool day here in the desert, over cast and below 98°. I am going to run it a bit warmer than usual as I want for dinner tonight. So no over night with the rub on it. I am not using the snake method I actually never have. Having trained myself to just control the heat by closing and opening the dampers. Here are some pics. Finished ones to come later. Enjoy!

Getting ready to make the bark as I put it(crunchy outside covering) I removed my heat barrier and move the butt.

Thanks Buckie. Glad to see you like as from what I gather being new here and all you are guru, BBQ whisper or godfather of low and slow on the kettles. It was good not as good as my normal. As I did hurry this one a bit as it was a last minute thing. The pickles are something that I had someone do once when I made pulled pork for them. I thought I gotta try that! I now go from with sauce to pickles and hot sauce to with potato salad. That's right tater salad and not slaw.

With the heat you have in AZ I bet you could do a low 'n slow with about 3 briquettes! I had my meat probe laying on the SS table from my Performer today and it read 115°F  and we don't have nearly the heat you see.

Your butt looks great!

Okay let me get this right deep fried tater salad!!!!! No way I gotta try some of that. Just when I think I have seen and eaten everything that has ever been deep fried!!!!! Mind blowing... just boooooommmmmm mind blowing!!!!

Anybody that puts tater salad on their PP sammies is alright by me......

Recipe's in "Other Recipes".....very flexible fix-up......
