Anyone interested in a Virtual Cookoff for Cinco de mayo (next week)?

I say cook off but really just photo share with some key points on the prep and cook for a Latin style bbq/menu?

I plan to do carnitas and tres leches and trying to see if the club wants to join in for this theme??

Hey Bobby, I mentioned it to Kellee and she's already thrown out a dozen ideas.....  Twist my arm a little more to get me to cook on the grill and share pics lol... Weather permitting, count us in!

It's a rainy 🌧️ morning but gotta do this....it's that time when you commit to something prior to and the day of you're just not feeling it!

Actually, once I got the carnitas on the Glen Blue "that feeling" started kickin' in.

Coming along...just wrapped in a BOO (Bed of onions) which is actually white onion, garlic, bay leaves, limes, oranges and veggie stock.

Wow @Gringo , Is that a chicken and pork combo for the carnitas? Looks delicious!

@RRRanger99 , thank you, it's actually all pork.  Looks deceiving in this case. I did use some paprika but not heavy since I was going for the Latin flavors of the traditional carnitas  (Oregano, cumin, garlic, salt/pepper). I did spritz with coke but the normal dark of the deep lard fat fry carnitas method wasn't used so color is a little light.

Overall real fun cook. Finishing up now and rest and then transport to the party . Thanks again.

Not Carnitas..... Still a solid entry I'd say!  Marinated outside skirt steak tacos, grilled Elote Salad, guacamole, homemade crema and flour tortilla chips n dipping cheese.  Kellee also made bunellos for desert.  Kudos to @AZ2FL for the corn n tater ring.  Love that accessory...
