No idea, been steady for some time now.   Just wrapped and refilled the hopper….temp drop around 6p was a spritz.

Thanks, it’s done now.  Woke up at 3am and the roast was at 209F.  Should be fine, put it in the warming drawer and will pull in the morning.  Yawn…..

Target temp was not that high, I fell asleep lol…. I also became quite ill in the middle of the night and all I could manage was to turn the spider 22 knob off and stick the wrapped roast in the warming drawer.  It sat there until 10a and Kellee took it out to check temp.  It was at 150F so it stayed safe for consumption thankfully.  She shredded it, refrigerated immediately, then vac sealed individual packs today.  I just got out of bed, cleaned up and gave her her birthday presents a day late.  She did try a taste and said it’s really good and juicy - hard to believe.  I’ll try it when I can muster something solid.

Our convection oven is a Kitchen Aid and the bottom drawer that most ovens have for storage is a warming drawer.  Apparently the medium high setting holds at 150F.  I use the warming drawer much more than I’ve ever used the convection oven.  It’s on basically any time I grill and is perfect for holding the protein while getting other things ready.  I’ll never have another oven without a warming drawer.

All this "Pellet," talk has got me taking a 2nd look at the Stoven BBQ pellet attachment. I ordered the leg stabilizer kit a while back for a designated rotisserie grill, and now I'm totally looking to get the

Whaddayaknow, the one appliance I didn’t know about.
To be honest, I use the oven to store all the grill stuff haha.
Had not heard about the Stoven either. Would be nice if you posted here about it if you get to use it, RRRanger99.
