Skirt Steak Street Tacos

These were amazing.  Have made these a few times, usually weeknight and no time to marinate long enough.  This steak was in the bag since 7am.  Highly recommend!

From what I understand a street taco is usually a corn tortilla with meat, onions and cilantro and is typically bought from a vendor operating on a street corner.  (I googled it)  So I guess these were not "street" tacos since we had meat, onions, cilantro and the option of lettuce, tomato and cheese.  And we used low carb tortillas, not corn.  I basically think of them as a soft taco you might buy on the run and have a quick meal.  I had leftovers today for lunch without the tortilla - like a mexican salad and it was so good!

Marinade consisted of 2/3 cup EVOO, 1/3 cup soy sauce, juice of one lime (about 2 tbsp), 1/2 tsp each of kosher salt, black pepper and red pepper flakes and 2 tsp minced garlic.  Whisk all together and put in a gallon bag with the skirt steak and into the fridge.  I rotated and massaged the bag/steak a few times during the day.

Looks fantastic. Marinated skirt steak is one of our favorites. We make it almost weekly.
