Kettle Pizzas

A day late for National Pizza Day, made a pepperoni, mushrooms and onion for me, olive oil, pesto, Roma tomato and basil for Kellee.  Been a while, and these turned out pretty tasty.

Thanks all!  @TXFlyGuy my setup does have the tombstone and a super heavy SS plate above but yes, I use the nonstick pans with holes in them which takes away the stress of getting the pies on and off with a peel and they are super easy to turn while cooking.  I've found that allowing time for the steel and the stone to get up to temp is key for even cooking (top and bottom) and of course turning them during the cook for side to side evenness.  I've not burned the bottom crust of a pie yet with this method.

Thanks so much!  To be clear, the pans were not preheated, I was referring to the 15lb slab of stainless steel that sits above the pies.  Having that and the stone up to temp before introducing the pies works great.

It’s a kit - the upscale offering from KP.  I ordinarily wouldn’t have spent the money on it, but I worked with the manufacturer after melting my top vent handle and voila, I have the upgraded kit.  These pics should illustrate what I have for the setup…..

Thanks!  The steel is actually an add on or part of the upscale kit.  I got mine for my birthday a couple years ago after my plastic handle melted and the company gave me a credit.  I don't think I'd pay what they're asking for it, but that thing sure is heavy and the tops of the pizzas cook as fast as the bottom with it in place.
