I think this is called reverse sear...let them heat up to about 120 indirect, then placed directly over coals. Just used Kinders the Blend seasoning. Turned out great. Pulled off at 140. Mixed up some butter with a truffle-permesan-black garlic powder. Put on the meat and mashed potatoes. That was nice.
