I too was using my GrillGrates flipped over using the flat side but since I got the GrillGrates griddle I haven't used the other ones. I have used the griddle on various grills and it has worked great for anything that needs a good sear and one section is under $25.

I did some indoor griddle smash burgers. Came out excellent but not what I was going for.

Upped the heat a bit and I think I’m on to something. 525-550 indirect and getting that nice crisp reddish crust. Not the best picture but here it is...



Note it’s crusty but not charred or burnt.
