Direct grilled steak night

Sure you can fuss with Sous vide or reverse sear or front sear or spin grate or whatever. I encourage it. But you can also just grill directly over the coals and get edge to edge sear and medium rare doneness without the “bullseye effect” that’s talked about. Just flip them a few times.

Ditto! I thought of sous vide many times, but I’ve always ended with, why hassle. Not saying it wouldn’t work or be good...those look very good!
