Lemon Cake

1(18 ounce) box lemon cake mix
1(3 ounce) box instant lemon pudding
4 extra large eggs
1 cup sour cream
juice of 1 lemon
zest of one lemon
1/2 cup oil

Mix all ingredients in a bowl until smooth and creamy. pour into a greased pan and bake at 350 degrees for about 60 minutes or until you can poke it in the middle with a toothpick or knife and remove it clean. DO NOT over-bake or it will not come out as moist. If you want a glaze on top mix 2 tablespoons of lemon juice,1 tablespoon of water and 3/4 cup sugar . I used regular sugar but if I make this again I will use powdered sugar to change the texture. Pour glaze over cake while still warm and let cool.
If it needs to be Heated to be Eated, I can do it on my Weber!
