Meatloaf and onion bombs

Pardon the SmokeFire, but hot diggity this thing can cook. I still prefer the kettle grilled stuff. The SmokeFire let’s you set the temp just right.

Can you explain how you made the onion bombs?

I showed my wife your meatloaf cook and @JEBIV too.

I’ll be cooking a meatloaf on GB when I get home this evening.

So I got some large yellow onions. Used a knife to make a bowl shape in the onion. Put meatloaf meat mixture in the middle. Wrapped with some bacon. On smoke fire til the meatloaf itself was 165. Then dropped chipotle Tabasco sauce on the meat of the onions, then a little handful of shredded cheddar.
