Preparing to cook a brisket in a 22" WSM

Hi,

I am preparing to cook my first brisket in a 22" WSM.  I think it'll be a 12 pound piece of meat and I'll be cooking it low and slow, around 250 degrees.  I'm guessing it'll take about 10 hours, give or take.  My question is about the charcoal.  Should 18 pounds (1 bag of Kingsford Original) be enough?  Also, should I put it all in at once or start with about half and load more as I need it?

18 pounds will be plenty.   Load all at once.  You can save the used or unburned coals.  If you plan to wrap you can save the coal after the wrap and oven finish.   A BTU is a btu at that point.

Thank you michaelmilitello. The bag lasted 10 hours, and could've gone longer but I shut it down at the end of the cook. The end result was splendid. It got 7 wows from the wife.

Wanted: 18" Platinum any color will work

A 7 wife-wow? Impressive. I have yet to try a brisket, but I'm going to set the bar lower and hope for a 2 or 3 wife-wow.

You should definitely try it.  You and your wife could be pleasantly surprised.  Post a picture or two!

I didn't see this until now. Just did a couple pork butts yesterday. Brisket is a little pricy for me at the moment, especially since I jumped on the opportunity to order the Glen Blue 26". Over the past few days, she has said that she didn't want to talk to me. Hopefully, the pulled pork helps.
