Which Size Vortex Cone??

Cooking-up around 50 small pieces of chicken wings and 6 drumsticks and trying to decide which Vortex Cone to use on my 22" Weber Performer Deluxe.  I have both the Medium and Small Size Vortex Cones, so, I will most likely use the Medium Size filled with a Lit Weber Large Chimney full of Weber Briquets and after the charcoal is lit I will close the bottom vents  to 1/2 closed and the top vent fully open as I do not want to burn the small chicken pieces.

So, what do you think of my plan above as your comments will be truly appreciated.

Medium both vents wide open is how I do it
