Fun rib cook

I was still out of charcoal so I used all mulberry wood. Hot and fast. Halfway I wrapped and added this year's first hot peppers and a little beer. I fired up the genesis and glazed the ribs while on the kettle then finished them over gas. Maybe my favorite ribs yet. I could definitely tell the difference in flavor using all wood for the heat source.

That's awesome and very creative.  What was the difference in flavor like?  Did you have to keep the lid cracked to keep the fire burning?

The flavor had more smoke flavor in a good way. It had a depth of flavor similar to low and slow that's sometimes lacking on hot and fast.

Yes I did have to crack the lid for the first hour. My target temp was 400-450 so when ever it would dip below 400 I would crack the lid until it was back up to 450. The second hour I did not have to crack the lid. It settled at 400 and stayed without any adjustments.

Grate job using the kettle as a stick burner, ribs look moist and not over cooked.

What hardwood is mulberry similar to flavor wise? I've never used mulberry for smoking.

It has a unique flavor so it's hard to compare it but I use it like I would use apple or peach. Great on chicken and pork. It's plentiful in my area because it grows in all the fence lines. It takes awhile to season. These chunks have been sitting in my garage for a couple years.

Yeah, I would definitely eat some of those. I can get mulberry pellets here. I'll give it a try.

It was subtle if it was there.  Next time I will need to do one without and one rack with to know for sure.

I think marinating raw ribs in peppers might work better to get the flavor to come through. I've been meaning to try that.
