Brisket!!

Omg. It’s my first real low and slow. Didn’t go over 225 for 9 hours. Wrapped at 5 hours. Added a stick of butter in the wrap. I’ll be doing that again! Anyway...it was a success. Good smoke ring. Had a decent bark too. Made my own rub with brown sugar, paprika, chili powder, garlic salt,  and black pepper. Nice crust on the outside.

Choice Whole packer brisket for $2.49 is good price. I purchased four Choice whole packers last week for $2.99 a pound (14lbs-18lbs each).

Your 11 pound brisket is a perfect fit for an 18" WSM

Good luck on the hunt for a used 22" WSM. They do use a little more charcoal than an 18" WSM.  I've cooked two 18lb whole packers at the same time in my 22" several times.
