Well I haven’t really posted much everyone life got in the way. So yesterday I decided to do a couple of Corned Beefs on the custom dual.

Some pictures of the cook.

Man I love corned beef!

Nothing like a little homemade pastrami!

Looks really good. What were your temp and time? Wood? I've been thinking about doing some, slicing it up and vacuum sealing it for freezer storage. Our corned beef intake is limited to corn beef and cabbage a few times a year.

Grill temp was 350 for a total Cook time of 6 vodka and lemonades. Internal temp was 160 when pulled and 30 min to rest on a cookie rack. Turned out really well, I grew up with mom’s corned beef that was always boiled or in the crockpot. The grill is the way to go with corned beef it’s the only way I do ours. I’m pretty sure moms looking down and saying “Good job kid”

Sear, Braise, then crust/dry it a bit.  Slice and Serve.   Very nice.
