Pork loin cold cuts

I smoked a pork loin on Saturday and put it in the fridge whole. I sliced it up as thin as possible by hand.

Today, I made a sandwich for lunch. I partially hollowed out a fresh loaf of Italian bread. I drizzled a little oil and grilled the bread on the genesis. Then I sliced up some fresh raw fennel. Then made a garlic aioli.

I only took a couple bad pictures but these sandwiches were incredible!!

Your pork loin sandwich sounds delicious!

You can use #1 cure to either wet or dry cure to make back bacon or American Canadian bacon with a pork loin. I make several batches a year. It's just not for breakfast either. It can be sliced thin on a deli slicer and makes excellent cold cut sandwiches.

Thanks guys. I’ll be doing this one again. That’s a good idea to use the rotisserie. I’ve actually done that before on a pork loin but ate it hot the same day as opposed to cold cuts. I do think it would make a better end result.

I really enjoy smoking pork loin and thin slicing it. Pairs well with havarti cheese. Hope to do more this weekend.

You could make a Cuban sandwich with that ! Did this recently with thin sliced tenderloin. Looks yummy!
