Cambro set up.

Coworker tragically passed away Tuesday and his services are tomorrow. I’m smoking 4 butts for the family to eat after the services . Injected them and threw them in my Briner Bucket with all  the leftover injection till 4 am . It’s nice being able to use the Cambro  to keep things cold like this to save room in the fridge. Pan of ice on the bottom will keep it cool for 10 hours. Most people only use Cambro’s to keep food warm but i find myself using this setup a lot !

Thanks man it was a sad situation ! Just received a text from the family saying the 2 full pans of pork was gone and people wanted to know if my seasonings was a secret because they wanted it.

I keep it simple with the seasonings when feeding a lot of people. Equal parts salt and pepper and 1/4 part garlic and onion powder. My secret is the pork injection but it’s simple ingredients too. Apple juice, water , salt , sugar , Worcestershire , and stained Italian dressing. The Italian dressing sounds weird but it works

If that’s simple, I’d hate to see complex...lol. I know Italian dressing works, I’ve used it before, and it’s really good.
