Cold smoked cheese .

Last night we celebrated my birthday ( which is Monday ) with some cold beer and grillin.  We decided to keep it easy with brats and cheese dip. But I have been waiting for a less windy day to cold smoke some cheese. I have never done cheese before but all the videos I watched it didn’t took to hard. I picked up the amazing bbq tube.  ( can’t remember actual name ) filled her up and got the cheese on . I have sharp cheddar, extra sharp cheddar, pepper jack, ghost pepper cheese, munster cheese, white cheddar, and mango habanero Gouda. I let them smoke for about 3 1/2 - 4 hours because I apparently can never remember to check the time
When I do a thing .    I didn’t try and of them . They are wrapped and in the fridge for at least 3 weeks. It’s gonna be hard not to get into them sooner !!! The picture mid cook on the kettle didn’t save to my phone but I’m sure you can imagine what smoked cheese looks like !

Looks good. Try and hold off on eating it as long as possible. It gets better the longer you wait.
Also if you have a vacuum sealer it will last even longer. I have some that rested for 2  years without molding.

Looks good. Try and hold off on eating it as long as possible. It gets better the longer you wait.
Also if you have a vacuum sealer it will last even longer. I have some that rested for 2  years without molding.

I can’t freakin wait!.   

February 8th is when I smoked it and out it in the fridge. I check on it every so often. Still have a strong smell of smoke so I am gonna wait a little while longer . But I am a very impatient person lol!

It won't hurt you, but it tastes better if you wait. I am in the same predicament. I did mine just over a month ago and want to try it but I would like to wait a little bit longer.
