Had to cut them in half, obviously, but I'm kinda excited to see how this goes.
My only other experience with ribs was in the oven, and a couple of failed attempts using WSJ and having no idea what I was doing. Now I'm using a plan, and even though I think I've got enough experience now to *maybe* pull it off in that tiny kettle, (or one of the bigger ones) think I'll save the frustration and use the WSM.[emoji38]
It's my day off and these are just for me, so I've got nothing but time, smoke, and beer.
