Pig head roast.

Started at 350F for the first 4 hours then cranked up the heat to 425F. Total cook time was roughly 5 hours.   Turned out much better than i expected. Meat was fall off the bone tender with a crispy/ flaky skin.

Questioning...? That looks good, but pig head? Is it one of those things that just feels freaky, but once you do it, you just didn’t know what you where missing?

I see pig heads at a local (big) market.  (Jungle Jim's).  So, what is the end result?  Taste, Texture, etc?  Enlighten me..I just might try it.  Once.
