A few pics from my beef rib cook

Ribs were rubbed with Mad Hunky Just Add Beef. Then a bit of raw sugar. Then some Montreal Steak seasoning.

Smoked with Olive wood. Lid temp ran between 250-300 for 6--7 hours.


Cooked em till temp waw 205 between the bones.

Made more fire and cooked some spuds.

Lookin good.

And it's time to eat!

Every time I see beef ribs here, I tell myself I'm gonna do those next!!!

X2 I call them the forgotten ribs. I love them but I never see them when shopping. I putting them on the GROCERY list tonight. They look great and the smoke ring... NICE ;D

I second what others have said here ... I need to source out some quality beef ribs and give these a try.

What a great looking cook. Have baby backs to cook today but now I’m bummed after seeing your cook I didn’t get the beef ribs.
Never used olive wood for smoking or seen anyone use it before. How do you like it compared to other woods?

I love the olive wood.
A friend in California sent it to me. I save it for special cooks.
Priced it online.....$$$$$.....It's a prized wood for furniture making. Absolutely beautiful and rock hard.
I reckon I'll never have anymore when this is gone.

Simple...
As you're cooking beef short ribs, there is so much pull back that ya get the feeling that you are ruining them...Not so. They aren't done till they reach a temp of 205 between the bones. Period. Take em off sooner and the meat might be tender but some of the crap inside is like rubber. Cook em right and it all melts in your mouth.

Back ribs (which I like better) are a bit less stressful...If only they had more meat on em...
