My daughter came home for the weekend and requested wings. Half buffalo and half honey mustard jalapeño cooked our favorite way.

Yep. My preferred method. But I still do indirect when I’m busy doing other things.

The roti ring buys me some time and allows the use of the entire grate.

Wings look yummy. I’ve been contemplating modding my roti ring so it could hold a grate as well. Do you ever cook with two grates double decker style? Any tips or tricks w the mod that you can share?

It’s very easy. If i remember correctly, I think I drilled 3 holes and installed stainless bolts to support the upper grate. It seems like I did them at the same level as one of the motor bracket bolts so there are 4 supports.  Can’t remember for sure but any arrangement of 4 bolts near the top will work. I use foil tape to cover the slot and hole when used like this.

I haven’t tried cooking anything on the lower grate but I have used the lower grate to hold a heat deflector and smoke ribs on the top rack. The mid section still leaks enough that you can’t get really low temps but I can get 280-325+ temps pretty easy. Or much higher when needed.

Overall it’s an easy mod that allows me to get more use out of the ring.
