Baby back rib

I decided to cook a rib 250-260 temp. today and put rib on bone side down and closed dome and didn't open up dome  for 5 hrs. to see how it turned out, here it is.

Yes that's the rib after 5 hrs. I got the fire dial heat diffuser in there don't know if that made any difference
