I did a rack of baby backs and an arm roast that I made into burnt ends.

I got started late and was rushed to get it to the table so I forgot to take finished pics.

I used Hardcore Carnivore Black on the beef and Hardcore Carnivore Red on the ribs. This was my first time using these rubs and I have to say, they are very good. I look forward to using them this summer.

Tri Tip and armadillo eggs grilled indirect with some almond wood chunks. On the Outrider, tailgating before Angels vs A’s in Oakland. Not the best pics but turned out awesome. Also, check out the sweet shirt! Too bad it was A’s colors...haha

I haven’t posted in awhile, but I was requested to do some beef short ribs yesterday. So I smoked 8 slabs of beef short ribs. This time around, I added several twists to my popular item:
 
  *  slathered some orange marmalade on the ribs prior to adding the rub
  *  used less brown sugar and more paprika & dry mustard
  *  added a Yabba Dabba Do factor as a finishing touch

On WSM 22, did 4 slabs of St Louis ribs. Rubbed and lightly sauced. During the last hour, I put on 2 2.5 lb Tri Tips with light rub. When they got to 125, rested them for 15 min, then reversed seared on my kettle. Tender and juiciest I’ve ever had... pink coast to coast. First thing eaten.....
