First time rib hanging

I've done just one and been fine.  Hook two ribs in and keep it around 300 F cooking temp.

I was a little concerned about them coming apart and wanted reinforcement. Does everyone generally use one hook?  I was already planning on getting 6 more hooks so I can do 6 racks.

One hook is all you need between the 2nd and 3rd bone on the thicker end.

To me, it tastes/smells like the ribs my dad made when I was a kid; it's very nostalgic. Believe it or not, some people don't like that flavor/aroma. I actually prefer doing a partial hang and then an indirect/wrapped finish. That's the one that pleases everyone.

Yep. As if by magic, they do not burn.

These turned out fantastic. I was short on time so the total cook time on the wsm was only 2:15. I then wrapped in foil and placed in a cooler with a towel where they continued to cook / rest another hour in transit and at the party. The smallest rack was cooked perfectly. I cut that one up and it was eaten immediately.  I placed the other two racks in one of the many Weber's at his house to finish. (most of my friends and family have multiple Webers).

Ive got to get an ash sweep for the one I'm sending to my friends house. Other friends and family can expect webers for any birthday / Christmas presents from now on lol
